Grill Chicken(ayam panggang besengek)




1 whole chicken fryer or 12 pcs of drumstick
4 shallot or 1 big yellow onion
5 cloves of garlic
4 Holland peppers removed seed if you don't like spicy
4 candle nuts or macadamia nut
2 slice of dried or fresh galangal use ginger if no galangal
3 kaffir lime leaf
2 stalk of lemon grass
1 tbs shrimp paste (terasi)
1 can coconut milk
1/2 cup of water
oil to saute

direction
blend shallot,garlic, hot pepper and candle nut in a food processor
heat the oil and saute the paste, kaffir lime leaf, lemon grass and galangal until fragrance
add chicken and water mix well until the chicken coated with spices
after 5 minutes lower the heat and add coconut milk bring to boil
turn off the heat and set aside let it cool down better if you let the chicken marinated overnight in spices mixture.
preheat the oven into broil, arrange the chicken into shallow baking dish and broil for about 10-15 minutes or until the chicken in golden brown.
don't throw away the remaining spice. drizzle the broil chicken in preheated spices and serve

indonesian comunity on guam



yes there are indonesian comunity on Guam, only handfull of us on Guam but we keep on intouch and everyweek we get togeather just to have lucheon or potluck and gosip time !! just the other day we have to said goodbye to our dear friend Di Lambert her and her family moved to singapore. we were so sad but anyways goodluck and God Bless DI !!

these only a handful of us that get togeather, there are some indonesian girls at Sheraton Laguna spa. marriot spa, paradise spa and spa Bali.

Ode to my Bali Girls

a year ago they left. it was unbearable especially to me, they were my family, my solace and my friends. life is fun and easier with them nearby, but just like everything else must come to an end, must they, their contract has prematurely terminated due to the bad economic situation on guam. so with heavy heartedly i said my goodbyes to litterally all of them but one, sariani, she able to stay here since she married Harry mayes on june and change her status.
to you all my sister, know that you all have teaches me the most important thing in live, family is defined not by blood but by bonds of friendship, trust, giving and love that you all have generously share with me. forever will i treasure every waking moment we share. you all left for greater reasons and better tommorow i couldnt be anymore proud to see you all go and suceeded in anything you do

Sambal Bajak

this dish is one of my speciality my mom and grandma taught me how to make sambal. sambal itself is a big staple of indonesian cuisine, this particular sambal originating from east java we call it sambal bajak..


10-20 hot peppers you can used holland peppers or red bell pepper if you like if using red bell peppers used 3-4

6 cloves garlic diced
5 shallot or one big yellow onion diced

4 roma ripe tomatoes or any tomatoes diced


1 tsb shrimp paste if you dont have a shrimp paste anchovies is ok too
salt to taste
sugar to counter balance the heat you can used little if using bell pepper
oil to fry

DIRECTION
heat the oil in a wok and cook the shallot, peppers garlic and shrimp paste for 5-7 minutes or until it softened dont over cook it,set aside
return wok into the stove add mor eoil than cook the tomatoes until soft.


Transfer all the ingredient in the mortar or food procesor and grind it until become a rough paste add in salt and sugar.
after the paste well blended return sambal into the wok and cook for 5-8 minutes or until the sambal color become deep red. you can add sweet basil.
