mbok kus turning 21 and iluh turning 18



on 10 of june iluh tunrning 18 ( hi..hi..) she wouldnt tell how old was she and coz that day we're so busy preparing sari wedding we didint do something big, just a cake for her.
on the 18 of July mbok kus and harry turning 21 ha..ha.. they have the same birth date and the same years, harry call mbok kus his twins from different wold. we took harry to outback and had dinner, but mbok kus was working afternoon so she cant made it.

finally we cook something last tuesday, we made fish head (mmmhmmm sound yummy dont it)plecing kacang, taluh bali and krupuk. for desert rujak mangga kocok and jaje timus. we went to asan beach and had luch. it was nice intimate and relaxing, we even had a time to look for some sea creature and kadek manage to cook it the next day
it was fun

daun singkong of guam





bukan memaling kalau tidak ada yang punya. itulah moto kita mencari daun singkong. karena orang guam tidak tau kelezatan dan gizi daun singkokng, jadi di sini daun singkong merajalela di guam, bulan lalu kita menemukan ladang baru setelah daun singkong di belakang McD dan di chalan san antonio punah. tepatnya di sebelah wise owl deket rumah melani. dengan berbekal macheti pemberian Hamster, pasukan berani mati bertempur diantara semak semak rumput gajah yg pantang mundur.mbok kus berseragam melani's pajama dan kaos panjang menenrjang semak belukar unstopable(untuk lebih jelas lihat poto), kita juga dapet umbinya lho. jadi kripik yang mak nyuss enaknya.kita nggak tau siapa yg punya ladang itu, tapi karena nggak ada yang runggu jadi kita nggak nyuri cuma menemukan hi...hi. sementara taz, kus and melani bertempur si kadek duduk manis ngempu lara (enaknya si kadek)
terbuktilah kita sebagai cucu PE-JUANG !!!!!

first mafia wedding on guam



on the 11 of june our dear friend harry and sariani united in a holly matrimony alias nganten.after engaged for almost 2 years finally they tie the knot. the ceremony was beautiful. like always the preparation is long and gruelling process from looking for suitable place, wedding dress, decoration and food.
plus the very limited time adding the stress level from 10 to 22. we only got 2 weeks to plant them all. i dont recomded planning beach wedding within 2 weeks to anyone. but we pulled it off, after long hours, sleepless night, achkie feet we finally decorated ypao pavillion with exotic and beautiful handmade janur decoration.
the altar was covered with pink and white plumeria and flame trees flowers as a trimming, paku pipit decoration adorn the coconut tree arch.it was aout of this world. we not talking the food yet. most of them homemade balinese food and some jamaican grill. the wedding cake OMG it was sweet. really the center of the wedding.
the ceremony start arround 4:30 pm just in time as the sun setting on the horizon. and the party kicking at 6 o'clock. dj mario lite up the pavillion as taz, hernik, lilik jammin on the rap music, finally UB 40 red red wine is the bride and the groom's first dance song.
well sariani is so oblivious regarding western wedding whatsoever, she just throw the bouquet to the crown while melani busy gathering the maids. and it landed under the table by lily, so she got the bouquet, congrat lilly.
the party comes to an end arround 9 o'clock at night
it was sooo awesome party, its been a hard work but it was worth it. we wish all the happiness in the world for harry and sari

mbok rahayu farewell



kemarin tanggal 16 june mbok rahayu pulang ke bali. kita semua sangat sedih, tapi kita juga tahu memang itu sudah nasib. tentunya kita seleruh mafia bali di guam akan sangat kehilangan dan merindukan sosok mbok rahayu. semasa di sini mbok rahayu adalah leader dalam bidang meditasi. walaupun vegetarian tp dia tetep aja suka ngumpul2 ama kita dan makan2 bareng juga.
mbok rahayu semoga suatu saat nanti bisa balik ke guam dan kumpul2 lagi

larasati otonan





kemarin tanggal 16 larasati otonan
karena jatuhnya hari sabtu nggak ada yang libur, jadi acaranya jam 8 pagi, sehari sebelumnya mbok rahayu, mbok seni dan mbok kus nginep di rumahku untuk persiapan banten dan segala sesuatunya. sabtu pagi hari baru mbok tasmini sama lilik datang.
syukur kepada Tuhan acara berjalan dengan lancar walaupun pagi pagi susah bangunin si lara. acara otonan ini sangat berkesan karena lara benar benar pinter nggak rewel ataupun nangis. malahan dia HERI(heboh sendiri) ketawa ketawa sama loncat loncat kegirangan.
acaranya di pimpin sama mangku in training jero kus ring pecatu dengan bimbingan mangku dari bali.jadi mangkunya keren pakai HP sama Skype loool.
pokoknya kita sekeluarga bersyukur dan berterima kasih kepada Tuhan, prabu dharmayasa atas doa restunya, mangku adiknya mbok kus (maaf lupa namanya)mangku kus, mbok rahayu, mbok seni, mbok tasmini dan lily juga kadek dan iluh(jegeg sajan canange nyanan langganan ane aku be muleh ke bali nah)sayang kalian nggka bisa dateng.
dan yang paling penting doa restunya supaya lara bisa tumbuh menjadi manusia yang berbakti penuh cinta kasih, murah hati, nedo nrimo,penuh rasa hormat terhadap karunia Tuhan. harapan saya dan daddynya supaya dia senantiasa bahagia terhadap dirinya dan apapun yang akan di cita citakanya kelak nggak usah jadi orang kaya atau artis yang penting berbudi pekerti yang luhur kita berdua sebagai orang tuanya sudah sangat bahagia.

tazmini's B'day


this tuesday the 14 one of our senior member (ceileeee )mbok taz turned 41 years younger, we had planned the party since last month. since taz and i and lara almost every morning now jogging around our block we had plenty time to discuss and planned the party only to start with chaotic morning. leo palace crew are terribely late, the birthday girl had to go to the labor departement,that left me incharge of cooking and cake baking.we scored discounted yellow cake mix from american grocery last week its only $1.56 and chocolate milk icing only $1.99 from cost u less.with less than $5 we created heart shape birthday cake adorned with orchid from my back yard. it was very nice cake made out of 100% love.
arround 11 o'clock sari and harry arrived with all the baking nessesity, harry bragging off his cooking skill. only after highly anticipated pecan paund cake of his cooked ( mhmmm yummy)we finally certify him as a pastry chef.now he has earn his pass to enter our kitchen LOL.
it's almost 1:30 when we finally finished the last dish i couldnt remember what it was, but its still smouldering when we took it to the beach.
our menu is vegetable curry with chicken feet(trust me this dish got a kick )ayam sisit, tipat,pancit,ote-ote(seafod tempura) tipat, jaje lukis and rujak mangga.not as elaborate as the last picknik but still tasted good and all fun fun fun.
but this time we actually took our time to set up the food on the table took a couple picture and meditate for a minutes for tasmini.
after that the war has begun.eat like there is no tommorrow.
mas simon and pak dewa joined us followed by mas dede in the end of the day.
in between we had our chance to play arround in the water soak up the sand and the sand.

rame rame tamasya

hari selasa kemarin leo palace spa tutup, cuman mbok rahayu aja kerja (kasihan) melani ama mbok tazmini juga libur, jadi kita kumpul kumpul biasa makan makan.
melani's house jadi base camp nya. setelah melani ngantarin mbok taz nyari police clearance jam 7 pagi di tijan. trus leo palace crew dateng jam 8:30 an di westin.
nyampek di rumah melani kitalangsung mecelep ke dapur



kita bikin jukud ares misi babi, be bakar, sambel matah, kepala ikan mekuah,clam, sama jaje apa kaden mbok taz ama sariani bikin.
melani sibuk poto-poto sama ngempu lara,


tukang kebersihan (pasukan merah ) iluh ama kadek busy bersih bersih sama laundry.




sekitar jam 12:30 semua masakn udah siap kita langsung cabut ke ypao park di tumon bay. begitu meletakkan panci di salah satu pavillion ypao park mbok kus langsung ngambil piring sing ngrambang apa,langsung nyemak nasi, tengak be trus kebut makanya.
makan bersama temen temen di pinggir pantai, angis sepoi sepoi sementara aroma jukud ares dan be mekuah mmengelitik nafsu makan dan mengundang para lalat yg kata sariani lalatnya ypao park bersih (soalnya nggak ada tempat sampah di sekitar situ. sangking enaknya makan sampai lupa kalau kita bawa si kecil lara dan sampai lupa nggak poto makananya dulu. dasar !!!!!
setelah puas makan, baru semuanya kekenyangan dan mulain mengantuk.dasar kebo semua.
untung kita banyak handuk dan alas lumayan banyak jadi kita biasa saling tungging di pinggir pantai. sampek mbok kus ngelekatan si cobie my pooch.hi...hii.hiii




tp tamasya ini berkessan kita jadi ngangin kauh ngomongan masa lalu di saipan, pacar pacar kita dulu nyen ane ngelah barang paling gede ajak kaut menek, ngomongin makanan, ngomongin pisagane sama ngegosib, biasa kita orang bali di guam pada ember semua (kata eva the absent minded friend of ours( ke laut aja deh va !!!)
ngak terasa setelah berenang renang ria kita pulang sekitar jam 5:30 trus makan lagi.
dasar mulut ajak basang patuh embernya..

jeff's favorite beef salad


my husband love this thai and chammorro beef salad

1 lbs steak use tri tip or top sirloin or any stak you preffered
bunch ( 1 cup) fresh cilantro
1/2 cup of fresh mint leaf
1/2 cup chop green onion
half onion thinly slice
3 chili pepper dice add more for more heat
1 small cucumber Pelee, half and slice thinly
juice from 1 lemon
juice from half lime
6 cherry tomatoes cut into half
1/2 cup fish sauce u can eyeball it. add if u like more salty

how to make
in a skillet spay non stick cooking oil
brown the steak briefly, or until the both side brown approx 2 minutes each side
slice steak thinly
in a plastic bowl combine all the ingredient and mix well
refrigerated after mixing to marinate for about 30 minutes

( for more variation you can add lettuce or chop chinnese cabage)

sate lilit ayam

bahan

2 lbs ground chicken
1/2 can coconut milk
1 cup grated coconut
stick kita biasa pakai chop stick di pecah dulu

bumbu
(base genep)
5 bawang merah (shallot)
5 bawang putih ( garlic)
4 butir kemiri ( candle nut / macadamia nut)
3 lembar daun jeruk ( kaffir lime leaf)
1 cm kunyit (turmerik)
1 cm jahe (ginger)
1 cm kencur
4-5 cabai merah (hot pepper)add more if like spicy
2 batang serai
garam secukupnya (salt to taste)
pinch of sugar bila suka

cara membuat
* tegteg ( rajang semua bumbu) sampai halus
* campur ayam dan bumbu uleni hingga bumbu rata
* masukkan kelapa parut aduk lagi
* sedikit demi sedikit tuang santan jangan terlalu lembek ntar susah melilitnya.
* ambil sedikit adonan dengan tangan lilitkan ke chopstick mulai dari atas spiral ke
bawah chopstick jangan terlalu besar ntar susah matangnya, bentuk agar menyerupai
mini corndog.
* panggang di atas low grill

resep ini udah di coba oleh melani dan sariani hasilnya mak nyuuussss.

ikan bakar recipe (grill fish) asli jimbaran




mbok kus is from pecatu she make killer grilled fish in the picture is iluh her daughter and her mother i believe.
bahan (ingredient)

1-2 or as many fish you want,( parrot fish, snapper,gurami)
3 clove garlic
1 cm ginger
1 tsp corriander
salt to taste
2 tbs cooking oil
lime juice from one large lime

preparation

wash, gutted and scale the fish
make a diagonal incision on both side of the fish to help the seasoning abosrb well.
* ground all the garlic,corriander and ginger in mortar until smooth
* add oil and lime juice, and mix well
* rub the ground spices onto both side of the fish set aside
turn on the grill and grill away arround 10 minute each side depending on the fish size

sambal matah(dipping souce)
4 shallot or half of red onion
3 clove garlic
3 kaffir leaf
1 stalk lemmongrass
4 chilli pepper
1 tbs cooking oil
salt to taste
1/2 tsp terasi( shrimp paste) if you like
how to make
mince the shallot,garlic,kaffir leaf,lemmongrass,and chilli peper
in a small dish mix (with hands would be best) all the minced spices with cooking oil, salt and terasi

Rahajeng Galungan!!!!!

kemarin galungan kita kumpul kumpul di rmah melani maklum apartemen di leopalace dan mandara kurang besar,berhubung mbok kus, iluh, seni dan sariani megae, jadi terpaksa melani sama mbok taz (dadong lara) masak, dari pagi sampek sore menunya, tum ayam dan babi, sate lilit dan sate yg katanya sariani mau bikin tp nggak jadi, yah terpaksa melani bikin sama bakar ( dasar sariani lengeh)terus, plecing kacang panjang, jukud daun singkong, lawar gedang, tipat,rendang, ayam betutu,seafood ote ote,vegetarian lumpia (maklum mbok rahayu vegan)dessertnya jaje bantal, sumping waluh trus linda bawa corn puding.
dari pagi setelah melani nidurin lara trus mbok taz mebanten kita langsung seleg memasak, setelah jam tiga baru mbok rahayu, seni ama kadek dan linda+ anaknya dateng ontime untuk bungkus tum ama sate lilit.
setelah meditasi sebentar meja di buka jam 7 30 an tamunya lumayan banyak, uncle john and chuck, Dr jerry, kristina, hernik and her guyfriend, maria,siska bang edo and family ama susan temenya mbok taz and lily dari mandara dan harry pacarnya sariani.
it was great party, we had so much fun and great food.

tum recipe

Tum chicken, beef or pork
balinesse steam meat pockets

ingredients
(bumbu base genep)
2 lbs ground chicken or pork or beef
5 shallot (red onion for substitute)
5 garlic
2 stalk lemongrass
5 kaffir lemon leaf
2 cm ginger
2 cm turmerick (1/2 tbs turmerik powder)
1 cm
5 hot pepper (for more spicy just add more)
1/2 tbs corriander
1/2 tbs black pepper
1/2 or more salt
1/2-1 can coconut milk
salam leaf if any
banana leaf or aluminium foil
stapler to seal the leaf ( susah nyari semat)

preparation

* mince all the ingredient except banana leaf and stapler off course ;)
if you don't have the big chef knife just use food processors.
* in large bowl mix ground meat with the mince spices ( use hand for thorough
mixing)
* after the meat and spices well mixed add coconut milk and continue mixing until
the mixture like the cake mix consistency.
* cut banana leaf or foil into 8'X8' double it if using banana leaf add 2 spoonful
mixture wrap it and secure it with a stapler
* if u using salam leaf add a little salam in each pocket
* steam for about 30 minutes

my name is melani, ok it doesn't sound bali enough to be balinesse. i live on guam since 2003.
before guam i was in saipan togeather with my balinesse girlfriends, 20 of them to be exact, we all worked at mandara spa saipan. i was their'e supervisor for 2 years most of them become my best friend and soon my new found family. after i got married on June of 2003 i moved to guam a year after that 6 of my girlfriends moved to guam with me. now its more than 20 of us balinesse girls on guam.
even though we far from home, we tried to make the best of it, we proudly keeping our culture and heritage, every so often we gather for prayer or small party. best thing about living on the island is we can get free janur(coconut leaf) for canang sari or little flower offering.
we love and miss our beautifull island of bali and we dedicated this blogs for bali and its culture, cuisine, way of life and abundace beauty.
