tum recipe

Tum chicken, beef or pork
balinesse steam meat pockets

ingredients
(bumbu base genep)
2 lbs ground chicken or pork or beef
5 shallot (red onion for substitute)
5 garlic
2 stalk lemongrass
5 kaffir lemon leaf
2 cm ginger
2 cm turmerick (1/2 tbs turmerik powder)
1 cm
5 hot pepper (for more spicy just add more)
1/2 tbs corriander
1/2 tbs black pepper
1/2 or more salt
1/2-1 can coconut milk
salam leaf if any
banana leaf or aluminium foil
stapler to seal the leaf ( susah nyari semat)

preparation

* mince all the ingredient except banana leaf and stapler off course ;)
if you don't have the big chef knife just use food processors.
* in large bowl mix ground meat with the mince spices ( use hand for thorough
mixing)
* after the meat and spices well mixed add coconut milk and continue mixing until
the mixture like the cake mix consistency.
* cut banana leaf or foil into 8'X8' double it if using banana leaf add 2 spoonful
mixture wrap it and secure it with a stapler
* if u using salam leaf add a little salam in each pocket
* steam for about 30 minutes
